A perfectly cooked egg has the power to elevate any dish. From golden fried eggs to creamy scrambles, flawless poached eggs, or just-right boiled eggs, here’s your go-to guide for mastering every style. Get ready to transform the how you make eggs — every time.
SCRAMBLED EGGS
Beat 2 eggs with salt and pepper. Melt a knob of butter in a frying pan over medium heat. Tip the eggs in and cook without stirring for 1 min and then stir slowly with a rubber spatula until thick curds form but are still moist, 2-3 mins. Add 1 tbsp of crème fraiche for extra creamy eggs.
SUNNY SIDE UP
Melt butter in a non stick pan and fry over medium heat. Crack egg and fry for 2-3 mins until the white is opaque and completely set. Carefully transfer to a plate with a flat turning spoon.
POACHED EGGS
In a pan, bring 3 inches of water and 1 tbsp of white vinegar to a gentle simmer. Crack an egg into a ramekin and gently slide into the water. Cook for 3-5 mins or until the white is set but the yolk is runny. Remove with a slotted spoon and pat dry.
SOFT BOILED EGGS
Follow the same process for hard boiled eggs but set your timer for 7 mins.
HARD BOILED EGGS
Bring water to boil in a deep pan and carefully lower eggs. Cook for 10 mins and then transfer to a bowl of chilled water for 2 mins. Peel and devour.
BASIC MUST-HAVES:
A non-stick pan
Good quality butter
A rubber spatula, slotted spoon or flat turning spoon
TOP TIP: If an egg has a crack, you can add a little bit of vinegar to the pot when boiling. It will help to congeal the egg white if it starts to leak out from the shell.
