INGREDIENTS
- Approximately 8 leaves of cos lettuce
- 1/2 cup celery
- 1/2 cup red grapes
- 1/2 green apple, chopped
- 1/2 red pear, chopped
- 1 tbsp caster sugar
- 2 tbsp lemon juice
- 1/4 cup dried cranberries
- 1/4 cup toasted walnuts
- 1/4 cup Artcaffé Market Caesar dressing
- 1/4 cup whipped cream
DIRECTIONS
1. Chop the apples and pears into bite size slices and toss with lemon juice and sugar to retain colour.
2. Cut the celery into half-moons and the grapes in half.
3. Layer washed cos leaves in your serving dish.
4. Toss all the ingredients in apart from the dressing and cream.
5. Pour the cream into a bowl and whip till soft peaks form, pour in the Caesar dressing and continue to whip till you get a thick dressing consistency.
6. Drizzle dressing over the salad and toss just prior to serving.
