INGREDIENTS


  • 2 Art Bakery ciabatta
  • Beetroot hummus, Artcaffé Market
  • Pesto, Artcaffé Market
  • Gouda
  • Grilled zucchini, Artcaffé Market
  • Roasted peppers, Artcaffé Market
  • Sundried tomatoes, Artcaffé Market
  • Roasted aubergine, Artcaffé Market
  • Halloumi, sliced inch thick
  • Rocket


METHOD


  1. Slice the ciabatta in half.
  2. Spread over a layer of beetroot hummus. Then layer the sliced gouda, grilled zucchini, roasted peppers, sundried tomatoes, aubergine, and rocket.
  3. In a dry pan slice and grill the halloumi.
  4. Lay this over the rocket.
  5. Drizzle with pesto.
  6. Stick in a skewer to seal the sandwich shut. Slice as desired or pack for eating later.
