    A wholesome salad combining tender millet infused with fresh mint and roasted beetroot for a subtle, earthy sweetness. Finished with crisp greens, a light lemon dressing, and a sprinkle of seeds, it’s a refreshing and nutritious choice. Perfect as a light meal or a healthy side, this dish offers a satisfying balance of flavours and textures, ideal for any occasion.

    Ingredients

    Red Millet, Orange, Corn Oil, Mint, Spring Onions, Green Olives, Beetroot, Orange Zest, Salt

    Preparation Instructions

    1. Wash all fresh ingredients thoroughly and use 3 container system. 2. Soak red millet overnight and boil for 15 minutes on medium heat the next morning. 3. Bake beetroot for 2 hours at 180 degrees. Once cooked allow to cool and peel, and cut into uniform cubes. 4. Peel and grate the zest of oranges and cut into medium cubes - keeping the zest aside. 5. Wash spring onions well and slice (jullien). 6. Olives in slices, fine chop mint leaves 7. In a bowl mix corn oil, 5g orange zest and salt to make the dressing. 8. Incorporate all ingredients together - millet, orange cubes, mint, spring onions, green olives and beetroot with the dressing. 9. For garnish - use remaining orange zest, and chopped mint.
