This Artcaffe Charred Chimichurri Cauliflower Salad features a delicious blend of charred cauliflower and tangy chimichurri sauce. Ingredients

Cauliflower, Smoked Paprika, Garlic Paste, Corn Oil, Chimichuri, Mint, Mixed Peppers

Preparation Instructions

1. Cut cauliflower in medium sized florets, trim/shave discoloured area. 2. Pre boil water with a pich of salt and blanch for 10 minutes - drain and remove, then rinse under slow running cold water 3. Once slightly cool, place on a baking tray, marinate with garlic paste, smoked paprika, and corn oil. 4. In a preheated oven , adjust temprature to 180d and bake for 15 minutes until cauliflower appear golden brown/charred 5. Remove and allow to cool 6. Use mixed peppers from deli or bake, peel and slice into jullien 7. Fine chop mint - half to be used while mixing, half to be used as garnish 8. In a mixing bowl incorporate all ingredients together - charred cauliflower, sliced mixed peppers, mint with chimmichuri. 9. Utilise the remaining mint as garnish
